Still Here

So almost a month and a half passes by and...nothing. It's obvious that I have a problem committing to this blog, but I'm going to continue to give it my best shot. I've made lots of food and have taken lots of pictures, so for the next week or two I intend to just play catch up here and go through my back log. First up is something that I actually made last night. There's no real recipe and it's quite easily composed.

- Slice up some baguette, drizzle said slices with olive oil and toast for 5-7 min.

- Take two or three handfuls of baby arugula, put it in a bowl, add the juice of a lemon, some olive oil, salt and pepper and toss.

- Once the bread is toasted, remove from the oven and place the slices on a plate, top them with some good quality slices of bresaola (cured, air-dried beef).

- Top all the slices with the arugula salad and there you have it.

What kind of cheese would you recommend instead of the bresaola (for us vegetarians)?
